Fenugreek is an annual plant cultivated widely in India. Its leaves are eaten fresh or dried, while the hard golden-brown seeds are used in spice blends, pickles and tempering.
The seed’s bitter, maple-like aroma is unmistakable. Soaked seeds develop a slippery texture, which is why they also appear in many traditional household preparations.
For Keshsar, methi seed is infused into warm coconut oil rather than soaked in water. The seed material is removed when the finished oil is strained.
